Wild Fennel Pesto
A fresh, delicous and easy to make pesto recipe
- 1 large handful Fennel Fronds
- 2 Cloves of Garlic
- 6 tbsp Extra Virgin Olive Oil
- 1 Juice of a Lemon
- 40 g Pine Nuts
- 90 g Parmesan Cheese
- Salt & Pepper to taste
Add the fennel fronds and pine nuts to the bowl of the food processor and pulse several times
Add the garlic, lemon juice and cheese and pulse again, using a rubber spatula to scrape the sides of the processor down
Slowly add the olive oil while the food processor is running (this will help to ensure that the olive oil doesn't separate)
Season the pesto to taste
