Wild Fennel Pesto

A fresh, delicous and easy to make pesto recipe

Equipment

  • Food Processor

Ingredients
  

  • 1 large handful Fennel Fronds
  • 2 Cloves of Garlic
  • 6 tbsp Extra Virgin Olive Oil
  • 1 Juice of a Lemon
  • 40 g Pine Nuts
  • 90 g Parmesan Cheese
  • Salt & Pepper to taste

Instructions
 

  • Add the fennel fronds and pine nuts to the bowl of the food processor and pulse several times
  • Add the garlic, lemon juice and cheese and pulse again, using a rubber spatula to scrape the sides of the processor down
  • Slowly add the olive oil while the food processor is running (this will help to ensure that the olive oil doesn't separate)
  • Season the pesto to taste
